Characteristics
Uses
Cortland
Medium size, attractive red with white flesh, similar to McIntosh. Holds fresh color well in salad. Mild Flavor.
Salad, sauce, pie, baking, fresh eating and freezing.
Red Delicious
Medium size, striped to solid red. Rich, sweet and mellow. Distinguished by elongated shape and five knobs at blossom end.
A favorite for fresh eating and salads. Not recommended for pie or cooking.
Empire
Medium Size, red-on-yellow to all red. Crisp and juicy.
Excellent for fresh eating. Good for salad, sauce and pie.
Fuji
Small, sweet, crisp, juicy and low acid.
Fresh eating, salad, sauce.
Gala
Dull red, blushed or striped, yellow undercaast. Sweet, crisp, juicy.
Fresh eating, salad.
Golden Delicious
Medium size, attractive yellow. Flavor rich, tangy, sweet. Similar in texture and shape to Red Delicious.
Fresh eating, salad, baking. Excellent all-purpose apple.
Idared
Attractive solid red, mild, crisp, small core.
Fresh eating, sauce, pie, freezing.
Jonathan
Below medium size, solid bright red. Tart, tender, juicy. Sweet flavor when cooked.
All-purpose: fresh eating, salad, pie, sauce, freezing.
McIntosh
Medium size, nearly solid bright red. Rich flavor. High quality for eating, but soft when cooked.

Also called Crispin. Medium to large, yellow-green, juicy, sub-acid, crisp.
Fresh eating, salad, sauce and pie.
Northern Spy
Large, striped red, tender, crisp and juicy with spicy flavor.
Fresh eating, pie, sauce, baking, salad.
Rome
Red with red stripes, shallow cup around stem. Firm, medium-tart to sweet.
Best for baking and cooking, also for salad. Holds its shape in baking.
