Excellent fresh eating and salad. Good sauce, baking, pie, freezing. Mutsu Also called Crispin. Medium to large, yellow-green, juicy, sub-acid, crisp. Fresh eating, salad, sauce and pie. Northern Spy Large, striped red, tender, crisp and juicy with spicy flavor. Fresh eating, pie, sauce, baking, salad. Rome Red with red stripes, shallow cup around stem. Firm, medium-tart to sweet. Best for baking and cooking, also for salad. Holds its shape in baking.
